Coconut & mango ultra dessert

Ingredients
For 4 people
  • 250ml coconut milk
  • 130ml water
  • 150g Ferrero medium couscous
  • 50g caster sugar
  • 1 pinch of ground vanilla
  • 1 coconut milk yogurt
  • 2 mangoes
  • pomegranate seeds
  • 1 tablespoon of grated coconut
Method
  • Peel the mangoes and cut them into even strips.
  • In a saucepan, heat the coconut milk, water, sugar, and vanilla over low heat.
  • Pour in the couscous and mix carefully.
  • Cook over very low heat for 5 minutes, stirring regularly.
  • Leave to cool, add 1 yogurt and mix gently.
  • Pour into small bowls.
  • Top with the mango strips, pomegranate seeds, and grated coconut.
Tip
  • Coconut milk can be replaced with another plant-based milk such as almond, oat, etc…
