Coconut & mango ultra dessert

Method
- Peel the mangoes and cut them into even strips.

In a saucepan, heat the coconut milk, water, sugar, and vanilla over
low heat.
- Pour in the couscous and mix carefully.
- Cook over very low heat for 5 minutes, stirring regularly.
- Leave to cool, add 1 yogurt and mix gently.
- Pour into small bowls.

Top with the mango strips, pomegranate seeds, and grated coconut.
Tip

Coconut milk can be replaced with another plant-based milk such as
almond, oat, etc…
