Chicken and vegetable couscous

Ingredients
For 4 people
  • 3 chicken breasts
  • cut into cubes
  • 250g Ferrero medium couscous
  • 1 chopped onion
  • 1 crushed garlic clove
  • 4 tablespoons of olive oil
  • 400g green beans (fresh or frozen) cut into 2-inch pieces
  • 400ml cooked tomato sauce
  • 1 tablespoon of chopped basil
  • 30g Parmesan shavings
  • salt and pepper
Method
  • In a frying pan, heat the olive oil over medium-high heat.
  • Add the diced chicken and brown over a high heat, while stirring, for 3 mins. Add the onion and garlic and cook over a medium heat for 3 mins.
  • Add the green beans, salt and pepper and brown over a high heat for about 5 mins, stirring regularly.
  • Add the couscous, 150 ml of water, and tomato sauce. Mix, cover, reduce the heat to low, and cook for 5 minutes.
  • Sprinkle with chopped basil and Parmesan shavings and serve immediately.
