Method
- reheat the oven to 180°C.

In a large bowl, combine the dry ingredients: couscous, ground
almonds, brown sugar and baking powder.

In another bowl, whisk the eggs with the melted butter, milk, juice
of 1 lemon and the zest of 2 lemons.
- Pour over the dry ingredients and mix carefully.
- Pour into a greased cake tin and bake for 30 minutes.

Meanwhile, mix the remaining lemon juice with the caster sugar and 4
tablespoons of water in a bowl.
- Heat in the microwave (maximum power) for 3 minutes.

Turn the cake out onto a wire rack and prick gently with a fork; use
a pastry brush to brush lemon syrup over the top and down the sides,
leave to soak in and serve in slices.
