Ingredients
For 4 people
  • 200g Ferrero fine couscous
  • 60g ground almonds
  • 100g brown sugar
  • 1 heaped teaspoon of baking powder
  • 4 eggs
  • 90g melted butter
  • 100ml semi-skimmed milk
  • 2 organic lemons
  • 40g caster sugar
Method
  • reheat the oven to 180°C.
  • In a large bowl, combine the dry ingredients: couscous, ground almonds, brown sugar and baking powder.
  • In another bowl, whisk the eggs with the melted butter, milk, juice of 1 lemon and the zest of 2 lemons.
  • Pour over the dry ingredients and mix carefully.
  • Pour into a greased cake tin and bake for 30 minutes.
  • Meanwhile, mix the remaining lemon juice with the caster sugar and 4 tablespoons of water in a bowl.
  • Heat in the microwave (maximum power) for 3 minutes.
  • Turn the cake out onto a wire rack and prick gently with a fork; use a pastry brush to brush lemon syrup over the top and down the sides, leave to soak in and serve in slices.
